One Piece is over 100 volumes and still running, so there is no complete box set, and you shouldn't try to buy the whole thing at once. That's a lot of story for one purchase, and it ends at a natural break. If you finish it and want more, Box Set 2 picks up directly. If you don't, you've read a complete, satisfying adventure and can stop there.

Oda's art is dense and cartoonish, which puts some readers off at first. Give it a few volumes: the early chapters are the series at its roughest.

Attack on Titan is complete at 34 volumes, and Kodansha sells it in a run of box sets named after the anime's seasons: Season 1 Part 1 and Part 2, Season 2, Season 3 Parts 1 and 2, and The Final Season Parts 1 and 2. That makes it unusually easy to buy in stages, and to stop if the story doesn't grab you.

Season 1 Part 1 is the smallest set on this list at 784 pages, so it's the cheapest way to test one of the most influential manga of the last twenty years. Isayama's early art is rough, but the world-building and the mysteries planted here pay off over the full run in ways few long series manage.

Official box sets vs. "collection" bundles

Search Amazon for any popular series and you'll find two kinds of listing. Official box sets come from the publisher (Viz, Yen Press, Kodansha) with a slipcase and often a small extra such as a poster or booklet. "Complete collection" bundles are usually third-party sellers grouping standard single volumes, sometimes with no box at all, a generic brand name and a vague page count.

Bundles aren't necessarily bad, but you're buying the seller's packing job rather than a designed product, and stock comes and goes. Every pick above is an official set. If the official box is unavailable, as Viz's Demon Slayer complete set currently is on Amazon, a bundle of the standard volumes can be a reasonable substitute. Check the volume range in the title carefully before you buy.
